Following the success of its Costa Mesa eatery, Le Shrimp Noodle Bar, which specializes in Chinese-meets-Japanese-style ramen, will open its second location in Fountain Valley. The new (and far more spacious) location will open its doors on Friday, Sept. 13.
Noted for its shrimp-based broths, the upcoming Fountain Valley spot will offer a new chicken broth-based ramen with black garlic oil, ideal for those who eschew crustaceans. In addition to its a fowl-based broth, Le Shrimp will also feature an expanded menu that includes crispy prawn bao buns and shrimp tacos.
Fans of the South Coast Plaza location will still be able to slurp such favorites as the signature shrimp trio noodle soup (with handmade wontons, prawns and prawn paste meatballs), the dry ramen in chili vinaigrette and a handful of rice bowls.

Diners can select between thin or thick ramen noodles. Le Shrimp’s broth is simmered for eight hours using shrimp, chicken and spices like star anise, cinnamon, clove and white peppercorn.
The eatery will offer special buy-one-get-one promotion on all main entrees from Friday, Sept. 13 until Friday Sept. 19.

Le Shrimp is also known for its limited series collaborations. In 2023, the ramen purveyors joined forces with Smoke Queen pitmaster Winnie Yee-Lakhani to create a smoked char siu (Cantonese barbecue pork) prawn noodle soup. And later this month, its sister concept, Paradise Dynasty in Costa Mesa, will team up with Heritage Barbecue for a limited menu.
Singapore-based Le Shrimp has 16 locations in all, including restaurants in Singapore, China, Malaysia and Taiwan.
Le Shrimp plans on opening its next location at the Irvine Spectrum Center in October, followed by its first Los Angeles spot in early 2025.
